Turkey, Ham and Swiss Pockets

Well I guess since Hillary and her camera and computer have been out of commission that I would post something delicious for you all to try. I hope you will enjoy it as much as her super-yummy recipes :)
My mom gets these really cool recipe card things at least once a month and tonight I made one of the recipes. It was very simple and quick and most importantly, yummy!
Turkey, Ham and Swiss Pockets
1 sheet frozen puff pastry (from 17.3-ounce box), thawed
4 tsp honey mustard or Dijon-style mustard
4 thin slices deli turkey
4 thin slices deli ham
4 thin slices Swiss cheese
Makes 4 pockets
Preheat oven to 400 degrees. Roll out puff pastry on lightly flowered surface to 12-inch square. Cut into four 6-inch squares.
Spread each pastry square with 1 tsp mustard. Fold turkey, ham and cheese into triangles. Layer triangles of turkey, ham and cheese on one half of each pastry square. Fold pastry over filling; press edges with a fork to seal. Place on baking sheet.
Bake pockets until golden, about 20 minutes. Serve pocket sandwiches with additional mustard if desired.
**April's notes: The pastry is nearly 12 inches square when you unfold it so you only have to roll it a little flatter. I used packaged turkey and ham and it was perfect. I also used the Dijon mustard because we didn't have honey mustard but you don't really taste it once the sandwich is baked. It is also super-easy to double since there are 2 pastries in the box.
