Turkey, Bacon, and Avocado Wraps

This is just to give you some inspiration and isn't a recipe. I often will see things on a website and think, "Duh! Why didn't I think of that?!" or "Oh, yeah! I love that meal!" My family gets really sick of sandwiches, so this is my way of tricking my kids. It always seems like it's more fun wrapped up in a tortilla as opposed to being in between 2 slices of bread.

I'm sure you are well aware of the pure bliss that comes from the combination of turkey, bacon, and avocado. Plus, you get to eat bacon, and that's never a bad thing. Everyone needs more excuses to eat bacon. ;-)

The ingredients list is just what I had on hand the day I made these. There are tons of ways to improvise. I was in a hurry on this day and just threw these together in a flash, so they don't contain anything that required a lot of chopping/rinsing/dishes.

Ingredients:
turkey breast (I just used thick sliced lunch meat)
cream cheese, softened
1 avocado, sliced
lettuce (I used romaine)
bacon (less mess by cooking it in the oven!)
1 tomato, sliced
flour tortillas

Spread the cream cheese onto each tortilla, then top with remaining ingredients. Roll up, and cut in half on an angle. I secured mine with toothpicks so they'd stay rolled up.

Breakfast Sandwiches

My semester is over! I finished all my finals last week and have 2 weeks of school-free bliss before summer semester starts. I know it's going to go by way too fast!

Today's post isn't a recipe, it's a method. Since going back to school, I've been so busy that I've had to come up with a larger repertoire of quick and easy meals. My kids aren't lovers of cereal for breakfast. I've spoiled them with hot breakfast too much, I guess. The other morning, my oldest asked if we could go to McDonald's for breakfast since I had a busy day ahead of me with finals. That's when I got the idea to just make McD's at home instead -- healthier, cheaper, and faster.

These would also be a great thing to have on hand in the freezer for even quicker breakfasts.

You can do these sandwiches tons of ways. Poach or scramble the eggs instead of frying them. Add sausage or bacon instead of ham. Serve on biscuits instead of English muffins.

Ingredients:
English muffins
eggs
cheese
ham or Canadian bacon

Cook eggs however you want. This particular morning, I fried them in a little butter. Meanwhile, toast English muffins in the toaster. When eggs are done, assemble sandwiches.

I popped mine in the oven for a couple of minutes just to melt the cheese.

Turkey, Ham and Swiss Pockets

Well I guess since Hillary and her camera and computer have been out of commission that I would post something delicious for you all to try. I hope you will enjoy it as much as her super-yummy recipes :)

My mom gets these really cool recipe card things at least once a month and tonight I made one of the recipes. It was very simple and quick and most importantly, yummy!

Turkey, Ham and Swiss Pockets

1 sheet frozen puff pastry (from 17.3-ounce box), thawed
4 tsp honey mustard or Dijon-style mustard
4 thin slices deli turkey
4 thin slices deli ham
4 thin slices Swiss cheese

Makes 4 pockets

Preheat oven to 400 degrees. Roll out puff pastry on lightly flowered surface to 12-inch square. Cut into four 6-inch squares.

Spread each pastry square with 1 tsp mustard. Fold turkey, ham and cheese into triangles. Layer triangles of turkey, ham and cheese on one half of each pastry square. Fold pastry over filling; press edges with a fork to seal. Place on baking sheet.




Bake pockets until golden, about 20 minutes. Serve pocket sandwiches with additional mustard if desired.


**April's notes: The pastry is nearly 12 inches square when you unfold it so you only have to roll it a little flatter. I used packaged turkey and ham and it was perfect. I also used the Dijon mustard because we didn't have honey mustard but you don't really taste it once the sandwich is baked. It is also super-easy to double since there are 2 pastries in the box.

Greek Style BLTs

Yesterday I promised you my favorite way to use garlic mayonnaise, so here you go! I saw something similar to this in my Taste of Home magazine a few weeks ago, although that recipe just used ranch dressing instead. I also took the liberty of making a few more changes to make it extra delicious.

There really aren't measurements to this "recipe" because it's just more of a method. It's easy to eyeball how much you'll need to feed your particular crowd. How you prepare this recipe depends on what kind of bread you're using. You could use pita pockets or tortillas instead of the flatbread. I used pita pockets the first time I ever made this, and I have to say it was my least favorite way. Not because of flavor by any means, just because it made it really hard to stuff as much in there as I wanted, and the pitas ended up ripping from being stuffed too full. So if you use the pita pockets, I'd suggest you dice up the tomatoes and shred the lettuce.

Ingredients:
flatbread
bacon slices, cooked and drained on paper towels
lettuce
tomatoes
avocado, sliced
1 package feta
green onions, sliced
1 recipe garlic mayonnaise

It's silly to even type this up, since it's very self-explanatory. But you just assemble it like you would a regular sandwich. Spread a little (okay, a lot) of that garlic mayo on your flatbread, then pile on the rest of the toppings. Fold the flatbread over, and there you have it. There is only one thing I will do differently next time -- I will remember to get some greek olives!
