Big Mac Meatloaf

We love meatloaf at our house, and it's always fun to come up with new and delicious ways to cook the same, yummy comfort food. This recipe combines meatloaf with the flavors from McDonald's Big Mac sandwich - what could be better? And if you've never tried a Big Mac from McDonald's, I'd say you're seriously missing out. So go try one, and then make this meatloaf so you can see just how perfectly the flavors match!
Ingredients:
2 lbs ground beef
2 eggs
3/4 cup Italian breadcrumbs
1 cup thousand island dressing
1/4 cup chopped pickles or sweet relish
1/2 cup chopped onions, sauted until translucent
salt and pepper
1 cup shredded cheese

Once well-combined, mix in the shredded cheese. Divide in half, and form each half into a loaf shape. Place in a baking dish.
Bake at 350 for about 45 minutes. Our meatloaf was served with cheddar mashed potatoes, but green bean casserole, baked potatoes, corn or even just a simple salad would all go great with it!
Don't let the fact that this recipe makes 2 meatloaves scare you into halving the recipe. It's so yummy that you probably won't have any leftovers in the first place. If you do have leftovers, though, just make your own Big Macs out of them later in the week. Top the meat with some more Thousand Island dressing, a slice of cheddar, some lettuce and then serve on soft hoagie roll or hamburger bun - yum!
